According to the Food Network, rump roast is an inexpensive cut of beef known by several names in the US:

  • Bottom Round Roast
  • Round Tip Roast
  • Standing Rump Roast (if a bone-in rump roast)

Rump roast comes from the back of the cow, near the tail. Chuck roast comes from the cow’s shoulder, and is not the same thing as rump roast.

Classic roast beef is most commonly made with top round roast (source). However, rump roast often has more marbling than top round and can also be used for a tasty beef roast recipe.

I used a conventionally farmed rump roast from my local US grocery store for this recipe. Grass-fed, grass-finished roasts may need a lower temperature and longer cooking time (such as with slow cooking).

You also need a large cast iron Dutch oven, a good knife, foil, and a meat thermometer for this recipe. Using a meat thermometer is the best way to find the perfect cooking time for rump roast. The beef rump roast cooking time will vary depending on the weight and thickness of the roast you get.

How to Make Oven Rump Roast Recipe

Here are the step-by-step directions for how to cook a rump roast in the oven:

Rump Roast in Oven Recipe (Cooking Time and Temperature) (4)
  1. Let the rump roast rest at room temperature for one hour. Trim fat off the rump roast if it’s too fatty.
  1. When the rest time is up, preheat the oven to 275F (135C).
  1. Heat the oil in a large cast iron Dutch oven over medium heat on the stovetop. Season the rump roast with salt and pepper, and brown it on all sides (2-5 minutes per side).
  1. Peel an onion, slice it in half, then cut it into thin half-moons. Add it to the Dutch oven along with the thyme, garlic powder, and beef broth. If the roast has a fattier side, arrange it fatty side up.
  1. Put the Dutch oven on a rack ⅔ down in the oven (or use the middle oven rack for large ovens). Do not cover the pot.
  1. How long to cook 3 lb rump roast in oven? Cooking rump roast in the oven takes about 60 minutes for medium or medium-rare. Do not cook the rump roast too long or it will get very tough!
  1. The best way to check the doneness of a rump of beef roast is to use a meat thermometer. Here's an internal rump roast temperature chart:
DonenessInternal Temperature
Medium Rare 130-135F (54-57C)
Medium 140-145F (60-63C)
Medium Well 150F (66C)
Well Done 160F (71C)

8. After cooking, remove the rump roast from the pot. Tent the roast in foil and allow it to rest for 15-20 minutes before slicing thinly and serving. This gives the juices in the roast time to redistribute. (You can use the liquid in the bottom of the Dutch oven to serve the beef with au jus gravy.)

Should I cover my rump roast in the oven?

Do you cover a rump roast in the oven? I don’t cover the pan when baking an average 3-4 lb rump roast. Very large roasts (over 8 lbs or so) should be covered for part of the cooking time so they don’t dry out.

How long to cook a rump roast in oven?

How long do you cook a rump roast? Cook a rump roast for about 20 minutes per pound at 275F for medium rare. Keep in mind that this is for a roast that we sear on all sides on the stove top first.

For how long to cook a rump roast in oven with vegetables, it’s about the same amount of time unless you really fill the pot. However, since the average rump roast will be in the oven for 1-1½ hours or longer, you may want to cook the veggies separately so they don’t get mushy.

What temperature do you cook a rump roast?

I tested how to cook rump roast at 275F and 325F, and we strongly preferred 275F. It is harder to accidentally overcook rump roast at a lower oven temperature. Remember, overcooked rump roast is unpleasantly tough.

The minimum safe internal temp for roasted rump roast is 145F with a 3 minute rest time. As with steaks, I prefer the rump roast at 130F (54C). The color of the roast is not a good indicator of doneness (though completely brown/gray roast beef may be overdone).

Does rump roast get more tender the longer you cook it?

In general, rump roast that is slow cooked on low or pressure cooked will get more tender with a longer cooking time. Rump roast cooked in the oven uncovered, however, will get tougher with a longer cook time.

What’s the best thing to do with a rump roast? I like to make it into oven roast beef and serve it with some of these delicious sides:

  • Roasted Air Fryer Carrots
  • Mashed Potatoes
  • Costco Mac and Cheese
  • Dinner Rolls
  • Baked Potato at 375
  • Vegan Spinach Salad

Some ways to change this recipe are to use a rump roast brine or marinade before cooking. You can also switch up the seasonings for different flavor. I’m using thyme, garlic powder, salt, and black pepper. Here are some other rump roast seasonings:

  • Italian seasoning
  • Onion powder
  • Dried parsley
  • Dried basil
  • Oregano
  • Dried rosemary
  • Worcestershire sauce
  • Dried sage
  • Chili powder
  • Curry powder

🐄 How do you fix a hard rump roast?

If you’re making slow cooker rump roast and it’s tough, try cooking it longer on low. Make sure there’s liquid in the crockpot, such as beef broth or water.

🌡️ How to Store Rump Roast Leftovers

You can keep cooked and raw rump roast for up to 3-4 days in the refrigerator. Both raw and cooked rump roast can be frozen. I recommend storing slices of rump roast in a vacuum sealed freezer bag for long-term freezer storage.

Use leftover roast beef in roast beef sandwiches, cheesesteak, beef hash, or in a salad or pot pie. You can gently reheat leftover rump roast in the microwave, but be sure not to overcook it.

What temp is roast most tender?

IMVHO, the most tender rump roasts are cooked using a low crockpot temperature of 200-210F (93-99C). Usually, when an oven baked rump roast is too tough, it’s been cooked at too high a temp or for too long.

💭 Expert Tips from Dietitian Summer Yule

This is a level 3 recipe (weight maintenance and active lifestyles). Rump roast is a fairly lean cut of beef that is naturally low carb, keto, and gluten free. It’s a great source of protein, highly bioavailable iron and zinc, as well as an assortment of B vitamins.

Roast beef is most commonly eaten as part of a holiday feast or big Sunday meal, which is why I bumped it to level 3. That said, you could also make a lighter healthy meal with this protein. One way to do that is to pair a 4-6 ounce portion with non-starchy veggies (such as salad).

It’s what we do consistently with our overall diet that matters most, not one particular food. It is definitely possible to include lean red meat such as rump roast in a heart healthy diet. In fact, I’d argue it’s a far more nutritious choice than many other comfort foods (such as cakes, cookies, etc).

Nutrition information is for a generous serving of ⅙ of the roast, with visible fat eaten. Nutrition info is for the beef only, no au jus.
